Halloween gives us an excuse to get a little weird and take our imaginations to their limits. It is also one of the best times to create really unique cocktails, some of which are more gimmick than taste, but that's part of the fun.
These haunting drinks are great additions to a Halloween party and there is a great variety to choose from so there should be one or two that are perfect for your monster bash.
Brie (/briː/; French: [bʁi]) is a soft cow's milk cheese named after Brie, the French region from which it originated (roughly corresponding to the modern département of Seine-et-Marne). It is pale in color with a slight grayish tinge under a rind of white mold. The whitish moldy rind is typically eaten, its flavor depending largely upon the ingredients used and its manufacturing environment.
Brie may be produced from whole or semi-skimmed milk. The curd is obtained by adding rennet to raw milk and heating it to a maximum temperature of 37 °C (99 °F). The cheese is then cast into molds, sometimes with a traditional perforated ladle called a pelle à brie. The 20 cm (8 in) mold is filled with several thin layers of cheese and drained for approximately 18 hours. The cheese is then taken out of the molds, salted, inoculated with cheese mold (Penicillium candidum, Penicillium camemberti) or Brevibacterium linens, and aged in a cellar for at least four to five weeks.
If left to mature for longer, typically several months to a year, the cheese becomes stronger in flavor and taste, the pâte drier and darker, and the rind also darker and crumbly, and it is called Brie Noir (French for "black brie"). Around the Île-de-France where brie is made, people enjoy soaking this in café au lait and eating it for breakfast.
Overripe brie contains an unpleasant excessive amount of ammonia, produced by the same microorganisms required for ripening.
Some versions of Brie cheese are smoked.

The Green BeastPernod Absinthe Green Beast
Ingredients:
1 part Pernod Absinthe
1 part simple syrup
1 part fresh lime juice
4 parts water
Thinly sliced cucumber wheels
Directions:
Build in a Collins glass or punch bowl over ice. Garnish with cucumber slices.
Pumpkin CiderKahlua Pumpkin Cider
Ingredients:
2 parts Kahlúa Pumpkin Spice
Top with apple cider
Lemon squeeze
Directions:
Build over ice in a highball glass, and stir. Garnish with a cinnamon stick.

Ingredients:
2 oz Caliche Rum
3/4 oz lemon juice
3/4 oz apple juice
1/2 oz honey syrup
1/2 oz Cointreau
1/4 oz orange juice
Directions:
Shake all the ingredients and strain into a toddy glass and add hot water garnished with a cinnamon stick and a slice of orange with 3 cloves.

Ingredients:
1 1/2 oz Caliche Rum
3/4 oz Port Wine
1/2 oz Lemon Juice
1/2 oz Triple Sec
Cinnamon stick for garnish
Directions:
In a mixing glass, combine all ingredients over ice and stir until well mixed. Strain into an ice filled tall coupe. Grate cinnamon on top and garnish a cinnamon stick.
